Uno Paloma
While it may come as a surprise to some, the Paloma takes the top spot as Mexico’s most popular cocktail. This refreshing drink is perfect to enjoy with friends on a warm summer day. To make your own, rub a grapefruit wedge on the rim of a highball glass and dip it in salt. Pour in 60ml of grapefruit juice, 60ml of lime juice and 1 teaspoon of sugar into the glass; stir until dissolved. Stir in 60ml of Unión Uno, add ice and top it off with 60ml of club soda. Garnish with a grapefruit wedge, and you’re ready to enjoy!

Oaxaca, Mexico is the world’s leading producer of mezcal, dating back to the 1500s when the Aztecs first cultivated agave plants. Located in the south of Mexico, its mountainous rugged terrain and subtropical climate lend themselves well to the growth of these large spiky plants. While tequila is produced using only the blue agave variety, mezcal can be made from any variety of agave.
Family Know-How
Union Uno was created by master mezcalero Pedro Hernández, in San Baltazar, Oaxaca. Pedro is a ninth-generation mezcalero, renowned for his 100% hand-made, high-quality mezcals. This fruity, herbal mezcal has smoky wood aftertastes and is the result of his collaboration with the agave farmer families participating in Mezcal Unión.
A Natural Couple
Espadín and Cirial agave varieties come together in Unión Uno to create an intoxicating balance of botanical flavours. The sweet and fruity notes of the Espadín agave meet the earthy, herbal, citrus flavours of the Cirial. This combination is counterbalanced by a smoky taste that comes from the natural oakwood-and-stone oven charring of the agave hearts during production. Made using all-natural, organic ingredients and techniques, the fermented agave juice is distilled in an alembic copper still to produce this perfectly balanced, artisanal mezcal.
The Brains Behind It
Finding unity in production
In 2009, co-founder Alejandro Champion started the Mezcal Unión project with a group of friends. Interested in the mezcal process, they spoke with farmers and producers throughout Oaxaca and learned that the community was lacking unity. If they could unite the independent mezcal producing families, they could help create a brighter, more stable future for mezcal. They started Mezcal Unión with the goal of creating a collaborative network allowing independent producers to benefit from financial and technical support from the project and still maintain their freedom and independence.
