What's in it
- Grapefruit Peel
The only thing better than a glass of rosé on a summer evening is a Spritz - and a Baldoria Rosé Spritz is obviously the best selection of all. Pour 50 ml Baldoria Rosé into a spritz glass over ice, and top with prosecco - or if you want to go all out, top with rosé champagne. Garnish with a juicy slice of pink grapefruit, and sip it imagining yourself sitting on the edge of a Provençal lavender field in the stickiest depths of summer.Back to shop
When you smell Baldoria Rosé, you’ll be met with a gloriously fresh cloud of herbaceous, floral aromas.
When you taste Baldoria Rosé, you’ll experience a palate that walks the fine line between sweet and dry, with citrus and herb notes rounding out the underlying bitterness.
Although the original idea for Baldoria was born in a Parisian speakeasy, the vermouths themselves are made in a little artisanal distillery in Boves, located in the Piedmont region of northwest Italy. The blue Alps that surround the distillery are home to all kinds of flora and fauna - and all of the botanicals that go into the vermouths are either gathered from the side of the mountains by local pickers, or grown in the distillery’s own herb garden.
A delicate process
Baldoria vermouths are produced in a collaborative effort between bartenders and distillers, who work together to perfect the recipes. After the ingredients have been selected and weighed, they’re macerated in a hydro-alcoholic bath for ten days, to extract the flavours and colours. This is followed by a maceration in rosé wine, before the sugar dilution is added and the two macerations are assembled. It’s aged for five months in non-reactive steel tanks before filtering and bottling.
Building up the flavour array
Baldoria’s Rosé vermouth is inspired by the rosé wines which are much adored in Provence, but boasts an entirely different style. Lightly pink in colour, its flavour profile is built up from a fresh, light acidity given to it by grapefruit peel, notes of orange zest, a tiny hit of ginger, and a gorgeous array of herbal aromas, all sitting on top of a deeper, darker base of fennel and wormwood notes.
The Brains Behind It
A story of mixology
Baldoria is the brainchild of Tim, Dotan, and Daniel – better known as Ernest. Most of them work together at the world-famous Little Red Door, a mixology cocktail bar in the centre of Paris. Wanting to create luxury products for bartenders, they turned to Italian distillers Piero and Enrico to turn their dream into reality. The result is a range of luxurious, beautifully balanced contemporary vermouths - made by bartenders, for bartenders.More on the Brand
