Song Cha London Mule

- 50ml Song Cha Earl Grey
- 15ml lime juice
- 3 drops Angostura bitters
- Ginger Beer

Mix the Song Cha Earl Grey, lime juice, and Angostura bitters in a shaker, then shake well.
Pour into a tumbler glass and top with Ginger Beer.
Enjoy with ice cubes.

Song Cha: A Modern Revival of an Ancient Tea-Based Spirit

It was in China, during the Song dynasty (960-1279), that a tea-based alcohol appeared for the first time. Its inventor, the poet Su Dongpo, was a brilliant jack-of-all-trades: painter, judge, philosopher, calligrapher, governor, magistrate, tutor to the future emperor Zhezong, and... for his personal consumption, a tea distiller. Unfortunately, the recipe was lost over time until the creation of Song Cha in the 21st century.

Song Cha, or the Tea of the Song Dynasty, is indeed the revival of Su Dongpo's ancestral recipe. Song Cha is a true innovation, as it is not only a new product but also a new category in the world of spirits.
